Christmas Spiced Energy Balls

As Christmas draws nearer, I realise that I am so disorganised this year. I have been super busy with one thing and another, mainly work and studying. Usually by the end of November I have all of my christmas shopping done as I can’t stand going shopping in December when everything has sold out and you spend half of your day in a queue trying to pay for things.

Anyway it looks like that will be me this year! At least where I live we have a lovely Christmas market that smells like heaven on earth, with sweet cinnamon aromas and my favourite seasonal treat, mulled wine! Anyway with all of this in the forefront of my mind I thought it was a perfect time to start thinking about some yummy Christmas recipes to share with you all.

Nothing says Christmas to me like cinnamon, orange and ginger. So these little balls of christmassy joy contain just that.

The nuts provide a great source of protein and essential fats. Cashews also contain Tryptophan which is the precursor to Serotonin, our feel good neurotransmitter. A perfect way to elevate the mood and keep these dark cold nights from getting you down. I know quite a few people do suffer with seasonal affective disorder (SAD) so keeping your diet filled with these kind of foods is a great way to boost your mood and ward off the winter blues.

Anyway I hope these get you in the spirit for all things Christmas, perfect enjoyed with hot mulled wine by the fire with friends.


Ingredients 

1/2 cup medjool dates

1/2 cup dried figs

1 cup cashew nuts

The zest of one small orange and a squeeze go the juice too

1 teaspoon cinnamon

1/2 teaspoon ground ginger

2 teaspoons cacao powder

Bee pollen (optional to top with)


How to make

  1. Pop all of the ingredients in to a food processor and whizz for about 3-4 minutes. Once everything is finely ground up you can make balls by rolling the mixture between your hands.

2.  Top with bee pollen for a pretty finish! Keep these in the fridge in a glass jar, they keep really well for over a week.
