Quinoa Chocjacks

One of those situations where you crave something a little sweet, but you refuse to leave the house and instead throw a load of random things in to a pan and hope for the best…

Well this time it worked out well and good job because the craving struggle was real.

It turned out to be a mixture between a cornflake cake, a flapjack and a chocolate biscuit!?

Either way, it hit the spot.

This week I’ve been going a little crazy as I have been revising for an exam so these little slices of heaven were a real saviour of my sanity and just the right little afternoon pick me up!

I have been feeling quite stressed and I don’t like feeling stressed or think that it’s good for anybody’s health and I realised I was overthinking and worrying about unnecessary things. So I decided to change this mindset into something more positive, just like you change channels on the TV. I made it that simple. I changed to a much better channel with positivity and optimism and I remembered the words that my dear friend often quotes to me…‘Keep calm and carry on’ which is so simple, yet so true.

‘So shall you think – so shall you feel’

I really believe this statement is true, we can do and achieve whatever we set our minds to. Whether it be deciding to be happy today, deciding to lead a healthier lifestyle today, deciding not to eat that cream cake today, deciding to follow and pursue your dreams today… whatever it may be… YOU CAN DO IT.

You are in charge of your own life, so why not make it an outstanding one.

 

With this in mind, there’s a little slice of happiness here waiting to be made that is a little sweet and a lot delicious and it will not disappoint. And it’s packed full of healthy ingredients like quinoa, cacao, coconut oil and chia seeds!

Go on and give it a try and I promise you won’t regret it.

 

 Ingredients

Makes 9-12 squares

8 oz GF jumbo oats

4 oz quinoa flakes

2 handfuls of crushed up GF cornflakes

3 tablespoons brown rice syrup

1 oz coconut sugar

2 tablespoons cacao powder

1 tablespoon chia seeds (optional)

6oz coconut oil

How to make

Line a baking tray with parchment paper and pre-heat the oven to 180 degrees (fan assisted oven).

Melt the coconut oil, rice syrup and coconut sugar in a pan until all liquid.

Stir in all of the other ingredients and mix until everything is combined.

Press the mixture into the baking tray and bake for 15 minutes. Remove from the tin once cooled slightly and cut in to squares

(Makes 9 with a slightly smaller tray or 12 with a slightly larger one)
